FLUFFY VANILLA CUPCAKES
(vegetarian)

Ingredients
300g Caster sugar
300g Unsalted butter, softened
4 free range eggs
300g self raising flour
3tbsp milk
1.5 tsp vanilla extract
Method
Preheat the oven to 180C/160C Fan/Gas 4.
Line your baking tray with cupcake cases.
In a mixing bowl, add the butter, sugar and vanilla extract. Mix with an electric mixer for approximately 2 minutes.
add one egg and continue to mix, slowly adding each egg when the last is mixed in.
Sift the flour and fold the mixture until the flour is fully incorporated.
Add the milk and mix in until the mixture is smooth.
Use either a piping bag or a spoon to fill the cupcake cases until they are just over half way full.
Place in the oven for approximately 20 minutes or until golden brown. (to test, use a cocktail stick to pierce the cupcake, if you pull it out and it is clean, the cupcakes are done.
Decorate as desired and enjoy!
