WATER CHESTNUT AND SATAY SALAD
Serves 1
Ingredients
1tbsp sesame oil
half head of broccoli
1 large carrot sliced
1/2 red pepper
1/2 tin of water chestnuts
1/3 cucumber diced
1 large tbsp peanut butter
50ml light soy sauce
50ml coconut milk
1 lime
1 tsp chilli honey/honey and chilli flakes
2 chicken fillets/alternative
spring onion, chilli flakes and salt to garnish
Method
Cook your protein in the oven as required
Add sesame oil to pan on medium heat
Chop the broccoli and carrot and add to the pan
Whilst cooking make the satay sauce; add peanut butter, soy sauce, honey, lime and coconut milk to a bowl and stir
Add pepper and water chestnuts to the pan and fry for a further 3 minutes
Simultaneously add the satay sauce to a pan and cook for 3 minutes
Chop the cucumber into cubes
To plate, layer the fried veg, satay sauce, cucumber, sliced chicken
Top with chopped spring onion, chilli flakes and salt
